Food is a staple for events held at Sands Expo & Convention Centre. With thousands of events hosted at Sands Expo every year, mitigating food waste is a key priority in the venue’s sustainability journey. In addition to waste tracking, on-property aerobic digesters which convert food waste into non-potable water, and WasteMaster, a proprietary technology that turns food waste into a high-calorific substrate to be potentially repurposed as fertiliser or animal feed, Marina Bay Sands works closely with its community partner – The Food Bank Singapore – to donate unserved catered food to beneficiaries.
Banquet food is typically placed in warmers prior to serving. Should they remain untouched post-event, the food is immediately transferred to two on-property blast chillers, which can freeze food to -18 degrees Celsius in 90 minutes.
On the day of collection, Marina Bay Sands’ chefs will protect the frozen food trays in clingwrap, while The Food Bank staff will transport the trays to their beneficiary. The food may be further stored or reheated into a sumptuous meals for the community on the same day.
